Raw falafel balls

I'm not sure I know any vegans that DON'T like falafels! They were a regular in my diet until I went raw vegan. However, I recently discovered that raw vegan falafels do exist and they in fact taste so much nicer than your regular falafel!

Here's how you can make a great, raw vegan falafel meal at home

Spice mix:
1 tbs ground black pepper
2 tsp ground cumin
1/2 tsp cayenne pepper 
1 tsp oregano fine leaves
1 tsp coriander powder
1 tbs maca powder

Falafel mix:
2 tbs ground flaxseed
Juice of half a lemon
2 cup of grated carrot
1/2 cup sesame seeds
1/4 cup of finely chopped parsley
Dash of olive oil
1 date 
Spice Mix
Blitz in the food processor.
May need a dash of water to help get the right consistency to roll them.

Raw hummus sauce:
1 cup of mixed sunflower seeds and cashews (pre-soaked)
1 clove garlic
1 tbs tahini
1 tsp himalayan sea salt
1/2 zucchiniBlitz all ingredients up in a high speed blender. 




Rice:
Half a small cauliflower
1 tomato (from our neighbours garden)
Half a burpless cucumber 
1 Corn cob

Pulse all ingredients in a food processor until vegetables have a rice like consistency. 

Wash and prepare half a red cabbage to use the leaves for the wraps.

Assembly:

Like the photo below shows, this is a great dish for you and a few friends, because everyone loves playing with food and assembling their own little falafel wrap. I wouldn't advise you make this for a first dinner date or anything though, if you're like me there is no graceful way to eat these.
